RAW CARROT CAKE TRUFFLES

 INGREDIENTS

150 grams walnuts

3 tbls oats

100g grated raw carrots (squeezed out to reduce the water)

2 tbls coconut
100 grams dates
1 tbls of mixed seeds
2 tsp mixed spices (cinnamon, ginger and nutmeg

Blitz together and roll into balls, Put in the fridge while you make the frosting.

FROSTING INGREDIENTS

3 tbls maple syrup
100g raw cashews
120ml coconut cream
1 tsp vanilla
of lime
blend in your food processor and coat the balls and enjoy.

These are a real treat so limit yourself to one a day when you need a sweet fix. I have also made them without the frosting and they are still lovely.
