Friday night is fish and chip night but can it be healthy ?

Fish and chips on a Friday has been a favourite of mine for many years. Our local pub does a great Battered fish and chips every Friday for a fiver…YES YOU CAN STILL GET FISH AND CHIPS FOR A FIVER!

 

The trouble is I find my stomach doesn’t like the deep fried fish, the batter or the oil its fried in. So my healthy version is this…

 

The recipe…

 

For my sweet potato chips, I wash  and dry the potato, but don’t peel, and slice into wedges ….

 

I spread these onto a baking tray and season to taste and dot some coconut or olive oil over them and put them at the top of the oven ( I put mine @ 180. I have a fan assisted oven ) for around 20minutes….

 

I roasted a piece of salmon in the oven for just 15 minutes along side the potatoes,  I do this in parchment paper and make a little parcel to steam it and keep it moist…

 

I sprinkle in some chilli flakes and a tsp of coconut oil. I only had spinach in the fridge that night but add as much veg as you wish. My husband loves his with mushy peas !

 

Heres your shopping list…

  • 1 large sweet potato each
  • 1 piece of salmon each
  • coconut or olive oil
  • optional chilli flakes or a seasoning of your choice
  • Green veg

    Ive definatley gone off greasy fish n chips, so for me, the lighter alternative works really well. Lovely recipies very yummy and I still feel saintly!
